1 can of black beans.
1 brownie mix.
{i'd recommend one with chocolate chips added, or one which includes a stir in chocolate syrup}
next blend the entire can of black beans...
yes...just dump the whole thing in bean ends, liquid and all.
and blend...till really really blended...
not liquified...but not chunky.
add your blended can of beans, right into your brownie mix.
stir.
stir.
stir well.
then, if you really like your brownies rich and cakey- like me,
stir in that additional chocolate syrup {which came with your mix}.
don't add the eggs.
don't add the oil.
don't add anything extra...just the beans and the mix.
then invite your preschooler to lick the spatula.
"really mom?"
yes! lick away.
no eggs here.
ah.
licking batter off the spatula- truly a childhood treasure.
then bake them according to box directions.
we loved these.
we test tried them on several picky toddlers & adults.
no one could guess the black beans.
they're definitely more cakelike- than gooey.
and, they got a little crispy on the edges.
since, i'm always stirring stuff into our food
like ground flaxseed, or almond flour just to boost the nutrition,
{& just because i'm a "little bit of a hippie" according to mr.m.}
these will definitely be on repeat in our home.
so again...fabulous cakey goodness-
high in fiber
and did i mention they're low fat too!
i know!
i know.
too many good things in one black bean brownie.
at least, until our littles discover those empty black bean cans.
then this recipe might be overruled by now bean informed toddlers.
