This is a re-post because......we LOVE this meal. It's one of my MIL's and it's one of our favorites! With the cold weather here- we're eating this often!
{and another perk- it's super easy, healthy and
super fast- what more could you want in a recipe!?}
1 (16 oz.) can re fried beans
1 c. Bisquick "heart healthy" baking mix
1/4 c. water
1 lb. hamburger (I use ground bison)
1 c. salsa (I omit this and substitute: 1 cup frozen, thawed, stir fry pepper & onion mix)
1 1/2 c. shredded Cheddar cheese
I also add:
1 tbs taco seasoning
1 c. black beans (canned)
1/2 c. chopped tomatoes
sour cream
Heat oven to 375. Mix re-fried beans, Bisquick and water.
Spread mixture in the bottom and halfway up the side of a
greased 10-inch pie plate.
Bake 10 minutes.

Add thawed onion & pepper mix to bison, sprinkle in taco seasoning.
Cook till veggies are soft, onions are golden and taco seasoning is well mixed with bison.
Layer toppings on pre-baked Bisquick crust:
bison & veggies, black beans (& salsa- if using), & top with cheese.
Return to oven: bake 15-20 minutes more- till cheese is melted.
Yum!
**Our toddlers even eat this meal with a smile!
Now, that's a recipe that's a keeper!**
